What you will need:
2 cups finely chopped celery
1 1/2 cup chopped green onion
1 package of any hotdogs (maybe 2 packages because the more the meat the better it tastes)
2 tablespoon of butter
2 eggs beaten
1 1/2 cups of milk
2 cups of shredded cheddar cheese
2 (8.5) packages of dry corn bread mix
Now gather all you food stuff and measuring cups, knives etc… preheat your oven to 400 degrees
Finely chop up your celery
Now chop up your green onions. You can use scissor also. I lost my kitchen scissor. My son is probably using them in his bedroom.
Add both celery and green onions in a medium bowl, or any bowl would work
Next take your 2 TBS of butter and melt in your saucepan on medium to high heat
Once the butter is melted I added my chopped veggies goodness into the heated buttery skillet. Opps I forgot to take a picture of this mixture in the skillet. Now saute the celery and green onions for about 5 mins making sure that you stir it consistently so the green onions don’t get burned. Once the celery has lost its crunchiness your done.
Now get out your hotdogs. First cut your hotdogs length wise then in bite size chucks. I have 1 package here, however next time I think I would do 2 packages. Any type of hot dogs work.
Now remove your saute veggies out of the skillet and put them back into your mixing bowl. Add your cut up hot dogs to your saucepan. Cook these puppies for about 5 mins or until they start to brown a little. I guess you are just heating them up so they are not cold. Again I am cooking at medium to high heat.
As these dogs are a cookin’ gather up the rest of your ingredients…
Crack your eggs and beat away, then add 1 1/2 cups of milk (any type will do) and 2 boxes of corn muffin/bread mix. Stir
By this time your hot dogs should be cooked. Add them to the celery and green onions. Stir them up good. Now separate about a cup worth of this mixture along with a handful of cheese to top your casserole with before you stick her in the oven.

Now here is the fun part, we are almost done! Spray down you shallow 3 quart baking dish. Pour the stuff in, all but your reserved cup of mixture.
Now top off you almost finished dish with your reserved cup of celery/hotdog/green onion/cheese
Shove this baby in the oven!!! Which should be pre-heated to 400 degrees and bake for 30 mins
Now sit back and enjoy your glass of wine….or a can of beer seeing this is a ghetto fab dish!
This is what it should look like right out of the oven. Husband says it should be spongy to the touch. Who knows, he is the chef.
